Flax muffin
Want a dessert that is not only healthy but packs a ton of energy? These flax muffins are a great healthy option for dessert or even as a sweet treat to go along with your morning coffee. Flax is high in fiber and omega-3 fats making perfect for any occasion. Whatever you use them for, they'll definitely have you coming back for more.
Ingredients
1 ½ cups of Wheat Flour (you can use white if you'd like, wheat is just healthier)
¾ cup of Flaxeed Meal
¾ cup of Oats
1 cup of Splenda (taking real sugar out of this recipe, saves on calories, carbs and makes the muffins more healthy in general)
2 teaspoon Baking Soda
½ teaspoon of Salt
2 Apples pealed and shredded
1 ½ cups of Shredded Carrots
½ cup of Raisins
¾ cup of Milk
2 Eggs, beaten
1 ½ teaspoon of Vanilla
First off mix, the dry ingredients together, this includes, the flour, flaxeed meal, oats, splenda, baking soda, and salt. Sit the ingredients well. Next stir in the carrots, apples and raisins. In a separate bowl, mix the milk, eggs and vanilla. Slowly pour the liquid ingredients into the rest and stir slowly, until moistened. The final mixed product won't look as liquid and smooth as most muffin mixtures look, this is normal.
Finally add the mixture to a muffin baking pan. Make sure that you use muffin cups or you'll have a heck of a time getting the muffins out.
Bake in an oven at 350 degrees F for 15-20 minutes. You should be able to stick a toothpick in the final product and have it come out smooth. For best results let cool on a wire rack for 10 minutes, then serve with milk and enjoy!
